Ingredients


Vegetable oil spray
½ cup prepared pesto
¼ cup half-and-half
¼ grated Parmesan cheese
½ to 1 teaspoon red pepper flakes
1pound boneless, skinless chicken thighs, halved crosswise
1 small onion, sliced
½cup sliced red and/or green bell peppers
½ cup halved cherry tomatoes


Directions:


1 Mise en place.

Spray a 6 × 3-inch round heatproof pan with vegetable oil
spray; set aside. In a large bowl, combine the pesto, half-and-half, cheese,
and red pepper flakes. Whisk until well combined. Add the chicken and
turn to coat. Transfer the sauce and chicken to the prepared pan. Scatter the
onion, bell pepper, and tomatoes on top.

2 Cooking.

Place the pan in the Breville Smart Air Fryer Oven basket.

Place the AirFryer Basket onto the Baking Pan. Put the assembled pan into
Rack Position 2. Set oven to AirFry at 350°F for 15 minutes. Use a meat
thermometer to ensure the chicken has reached an internal temperature of
165°F.
