Ingredients


¼ cup creamy peanut butter
2 tablespoons sweet chili sauce
2 tablespoons fresh lime juice
1 tablespoon sriracha
1 tablespoon soy sauce
1 teaspoon minced fresh ginger
1 clove garlic, minced
½ teaspoon kosher salt
½ cup hot water
1pound bone-in chicken thighs
2 tablespoons chopped fresh cilantro, for garnish
¼ cup chopped green onions, for garnish
2 to 3 tablespoons crushed roasted and salted peanuts, for garnish


Directions:


1 Mise en place.

In a small bowl, combine the peanut butter, sweet chili
sauce, lime juice, sriracha, soy sauce, ginger, garlic, and salt. Add the hot
water and whisk until smooth. Place the chicken in a resealable plastic bag
and pour in half of the sauce. Reserve the remaining sauce for serving.

Seal the bag and massage until all of the chicken is well coated. Marinate
at room temperature for 30 minutes or in the refrigerator for up to 24
hours. Remove the chicken from the bag and discard the marinade. Place
the chicken in the Breville Smart Air Fryer Oven basket.

2 Cooking. Place the AirFryer Basket onto the Baking Pan. Put the
assembled pan into Rack Position 2. Set oven to AirFry at 350°F for 20
minutes. Use a meat thermometer to ensure the chicken has reached an
internal temperature of 165°F. Transfer the chicken to a serving platter.

Sprinkle with the cilantro, green onions, and peanuts. Serve with the
reserved sauce for dipping.
