For the Spice Mix
1 dried red chile, or ½ teaspoon dried red pepper flakes
1-inch piece cinnamon or cassia bark
1½ teaspoons coriander seeds
1 teaspoon fennel seeds
1 teaspoon cumin seeds
1 teaspoon black peppercorns
½ teaspoon cardamom seeds
¼ teaspoon ground turmeric
1 teaspoon kosher salt
For the Chicken
1pound boneless, skinless chicken thighs, cut crosswise into thirds
2 medium onions, cut into ½-inch-thick slices
¼ cup olive oil
Cauliflower rice, steamed rice, or naan bread, for serving
1 Mise en place.
For the spice mix: Combine the dried chile, cinnamon,
coriander, fennel, cumin, peppercorns, and cardamom in a clean coffee or
spice grinder. Grind, shaking the grinder lightly so all the seeds and bits
get into the blades, until the mixture is broken down to a fine powder. Stir
in the turmeric and salt. For the chicken: Place the chicken and onions in
resealable plastic bag. Add the oil and 1½ tablespoons of the spice mix.
Seal the bag and massage until the chicken is well coated. Marinate at
room temperature for 30 minutes or in the refrigerator for up to 24 hours.
Place the chicken and onions in the Breville Smart Air Fryer Oven basket.
Place the AirFryer Basket onto the Baking Pan. Put the assembled pan into
Rack Position 2. Set oven to AirFry at 350°F for 10 minutes, stirring once
