Pine nuts (1/8 cup)

Zucchini (½ large, chopped)

Salt (¼ tsp.)

Olive oil (1½ tbsp., extra-virgin)

Lemon (½, zested)

Black pepper (½ tsp.)


Set air fryer to preheat to 340°F.
Toss pine nuts with 1 tablespoon of olive oil and spread out on a small sheet pan.
Set to air fry until nicely toasted (about 4 minutes).
Set aside. Add your zucchini to a large bowl with salt, pepper, lemon zest, and garlic, drizzle with oil, then toss to coat.
Transfer to a small baking sheet, and set to air fry until the zucchini becomes slightly crisp (about 6 minutes).
Combine your roasted zucchini with nuts, and lemon juice, toss to coat, then serve.
